In almost all of the granola recipes, you find on the Internet granola is baked. And since I don’t have an oven, I was always bummed that I cannot make it. Recently I Googled the stovetop granola recipes and to my surprise found out that there are many of them. And it’s very easy and quick to make it this way. It isn’t the same as baking the granola but the one I made tastes great, and I cannot wait to try different combinations of flavors and ingredients next time.
This granola doesn’t form clusters and is quite crumbly. But I don’t mind it. I like the taste and how easy it was to make. It also isn’t too sweet, just enough. It’s best served as a topping on yogurt or smoothie bowl.
Stovetop chocolate coconut granola
Inspired by the recipe on The Kitchn blog.
- 1 cup rolled oats
- ½ cup shredded coconut
- 4 tablespoons of coconut oil
- 2 tablespoons of cacao powder
- 2 tablespoons of maple syrup (or honey)
- 2-3 tablespoons of dried cranberries
Mix the rolled oats and coconut in a nonstick pan. Toast it over medium heat for a few minutes until the mixture gets slightly golden, and the coconut will get fragrant. Transfer to a bowl and set aside.
In the same pan melt coconut oil. Add the maple syrup (or honey) and stir well until thoroughly combined. Next, add the cacao powder and mix well. You want smooth chocolate sauce without any chunks.
Return the oats and coconut mixture to the pan and mix well with the chocolate sauce. Leave on the medium heat for few more minutes, stir occasionally. Add cranberries at last.
Turn off the heat and let the granola to cool before transferring it to an airtight container where you can keep it up to a week (but it probably won’t last that long ;)).
