If I could eat just one soup for the rest of my life, it would choose tomato soup. I love tomato soup. And lately, I’ve been loving this creamy tomato soup with quinoa.
My mom makes her tomato soup sweet, she’s using tomato puree and adds a handful of rice to thicken it. Tomato soup in one of my favorite restaurants in Bratislava has a cooked skinless oval tomatoes in it parmesan cheese on top and is sweet enough. And when I was in the US, I fell in love with tomato basil soup at Cosi and ate it almost daily.
If I order soup in a restaurant, it’s most likely tomato soup. I request tomato soup when I go visit my parents, and I prepare it at home fairly often. It’s just such a delicious and easy-to-prepare dish.
I rotate different versions based on what I have on hand but lately, I’ve been making mostly this creamy tomato soup with quinoa. It has a texture thanks to chunks of tomatoes, it’s rich, sweet and quinoa in it keeps me satisfied longer. It’s my go-to soup after a long day because it’s ready in just about 20 minutes
Creamy Tomato Soup with Quinoa
- 1 tablespoon olive oil
- ½ onion (finely diced)
- 1 teaspoon cinnamon
- 1 can of diced tomatoes
- 500ml tomato puree
- ¼ cup red quinoa
- ½ cup heavy cream
- Salt & Sugar
- Heat the olive oil in a medium-size pot. Add onion and sauté until translucent. Add the cinnamon and stir.
- Next add the can of tomatoes, tomato puree, quinoa, a bit of salt and about 500 ml of water. Bring the soup to simmer, turn the heat to low and let lightly simmer for about 15 minutes.
- Taste the quinoa, and if it’s fully cooked, add the heavy cream and some sugar and salt to taste.
