Apple Cinnamon Overnight Oats

Fall is most certainly here. It’s there when you look at the calendar. You can feel it breathing in the cold air of an early morning, see it in the colored leaves of changing trees. I feel like fall arrived in Brussels a long time ago. And what I’m missing the most is the early morning light, shining sun, and abundance of fresh fruits and vegetables. All of which was in abundance just a few weeks ago.

I can’t do anything about the changing season, cooling temperatures, or upcoming short days. But what I can do, is to enjoy what fall has to offer and focus on the best ways to benefit from long winter evenings. I already have a few ideas for spending more time indoors. I look forward to reading more books, enjoying a hot bath, bringing more hygge into my life, baking bread, cooking chili and dhal and curry and soups. Yum! But I guess I’m getting ahead of myself 😉

In fall there’s still a lot to enjoy – hazy sun of an Indian summer, temps still warm enough to go for a run, and fall harvest produce. Fall is a season of many great things – apples, grapes, and figs being just my favorite examples. So, while they are still in your store’s produce section, make a good use of them and enjoy these overnight oats with me.Apple Cinnamon Overnight Oats

Apple Cinnamon Overnight Oats

Servings: 2


  • 1 red apple (shredded)
  • 1/2 cup grapes (quartered)
  • 3/4 cup rolled oats
  • 1/2 cup plain yogurt
  • 1/2 cup milk of choice
  • 1/4 cup pecans (chopped)
  • 1 level teaspoon cinnamon
  • 1 tablespoon flax seeds (optional)


  1. Mix all ingredients.
  2. Cover and store in the fridge overnight.
  3. In the morning, serve in bowls topped with more figs, nuts or maple syrup, if desired.
