A few years ago I started to gradually change my diet. Not in an attempt to lose weight but with a desire to fuel my body with the good stuff, to prevent diseases and form good habits in eating. I would say I was quite successful and most of my meals are plant-based and healthy.
One area I still need to work on is snacking. I cannot eat just three times a day; I need snacks. Lately, I have been looking for healthier snacks to have on hand. With any meal, not just snacks, the key is to be prepared. If I have healthy food at home, I will eat healthy food. If I have junk, I will eat junk.
So I started to bring cherry tomatoes, nuts or smoothie to work to have something healthy to snack on. My favorite smoothie is a peanut-butter-chocolate smoothie, but that is more like a dessert than a healthy smoothie, so I recently started to prepare this bright green, refreshing smoothie. The smoothie is rather thick so you may want to add more milk.
- 350ml milk (e.g. rice or almond)
- 2-3 handfuls of spinach
- 1 banana
- ½ mango
- ½ avocado
- 2 rounded tablespoons of baobab powder (optional)
Put all ingredients into a blender and blend until smooth. If you are using an immersion blender like me, put all ingredients into a tall container and blend with an immersion blender until smooth.
